Recipe: Favorite Healthy New Years Snacks

We know New Years celebrations are on the cusp of indulgent holiday food season, but there’s no harm in ringing in the new year with healthy and nutritious treats. We love snacking on healthy recipes over here, and want to share a few of our favorites from 2018 that will make any New Year’s Eve party one to remember (and feel good about on January 1!).

1. Beet Hummus with Sea Salt Flackers

A juicy twist on your favorite mediterranean dip. This recipe for beet hummus adds a colorful punch to any spread. Vegan and gluten-free, too!

Bonus: beet hummus is much more Instagram-able than regular hummus.

Here’s a recipe we love to make:

Ingredients

1 roasted beet, cooled and peeled

2 ½ teaspoons of minced garlic

¼ cup of extra virgin olive oil

2 big tablespoons of tahini

1 15 ounce can of chickpeas, drained

Zest from one lemon (to taste)

Juice from ½ of a lemon

Salt and pepper to taste

Sea Salt Flackers

Instructions: Blend the beets in a food processor. Add in the rest of the ingredients except the olive oil, and blend. Slowly drizzle the olive oil in until it’s all blended. Taste test and add in more salt and pepper or lemon zest or juice as needed. Enjoy!

Definitely one of our favorite recipes from the year. For fans of Chex Mix, we put together this flax-infused party mix that is gluten-free and vegan.

Ingredients

1 bag of Sea Salt Flackers (roughly 2 cups)

1 bag of Savory Flackers (roughly 2 cups)

2 cups Rice Chex

2 cups Snyder’s of Hanover Gluten-free pretzels

1 cup of mixed nuts

2 Tbsp Worcestershire sauce* (SEE DIETARY NOTES BELOW)

5 Tbsp organic coconut oil

1 ½ teaspoons seasoned salt

1 ½ teaspoons garlic powder

1 teaspoon onion powder

Pinch of cayenne pepper (optional)

*Dietary Notes: Worcestershire Sauce

A typical Worcestershire sauce recipe is made with soy sauce that contains wheat and anchovies, a saltwater fish. We’ve listed a couple different brands you can use that will fit your specific dietary needs for this recipe.

Instructions

Preheat your oven to 250°. In a small bowl, mix the coconut oil if already liquid (if stored in a cold room and solid, melt the coconut oil in the microwave in 30 second increments until fully melted), garlic powder, onion powder, seasoned salt, Worcestershire sauce, and optional pinch or sprinkling of cayenne pepper.

Lightly break up the Flackers crackers to your snacking size preference. *Be careful not to pulverize the bag and turn them into crumbs.

Place Flackers, Rice Chex, gluten-free pretzels, and mixed nuts on a baking sheet. Pour the seasoning mix over top and mix together with a spatula until seasoning is evenly distributed.

Bake on 250° for 1 hour stirring every 15 minutes. Let cool and enjoy!
